Ristorante Clotilde

📜 Some history: The tradition of Roman cuisine meets contemporary taste and new cooking techniques at Clotilde. A medieval stones throw from Piazza Navona, Ristorante Clotilde is all about the Slow Food movement, and it’s owner restauranteur and sommelier Clemente Quaglia, serves old school Roman staples such as beef stewed with tomatoes, and veal with mint, onion and tomatoes. Head chef Giorgio Baldari sources ingredients of the highest quality and uses renowned local butcher Angelo Feroci. Pasta is as fresh as fresh can be, made in house. Organic tomatoes are from Angelico Travaglini’s award winning farm, truffles from Savini and rice from Zaccaria.

📜 Some history: From research to the kitchen, from the laboratories of virology to the stovetops. Eliana Catalani left an international career, after 37 years along side the Nobel Prize winner Rita Levi Montalcini, to pursue her vocation as a refined and sophisticated gourmet chef. At the helm of the restaurant Spirito Di Vino, on via Dei Genovesi, in the heart of ”old” Trastevere, Eliana Catalani began with a passion inherited from her father. She is joined by her husband Romeo (who artfully describes the menu) and her son Francesco, who oversees the cellar that houses over 800 wines.
"Cuisine has much in common with my work as a researcher and lab technician," she explains. Everything you eat here is homemade, from fresh tomato sauce to jams, compotes, syrups and all the sauces that accompany the dishes, from appetizers to desserts.
