In here you can setup preset colors alternatively you can cast into
Color Wheel

and set them up per-maturally
before adding the widget into viewport

you can however over to HUE and LMB any color you like while hovering over that color also you can pick a color and move the Value gauge to increase or decrease that color value, you can do the same with saturation gauge.
