Ingredients

Whole chicken
Salt
Sugar
Rosemary
Garlic

Instructions

Spatchcock the chicken
Brine the chicken. Brine for 1-2 hours, 2 hours max.
A standard brine is 1 cup of salt, 1 cup of sugar and 1 gallon of water. Add rosemary or garlic if you want.
After brining, let dry out for 30 mins in fridge, will help crisp the skin.
Apply some oil to skin and cover inside and out with favorite rub
Set up raised direct at 400 degrees, add some cherry wood for flavor.
Cook skin side down for 15 min, then flip over and check after 35 minutes.
Cook until internal temp of 165 for breast and 180 for dark meat.
