3x3: The basic white cake

Since I could not bring each of you cake, here is a recipe of what I made, and some options for you to make your own.
For that time you want something quick and easy (and not worrying about the calories)

Cake

Ingredients

1 cup white sugar
½ cup butter
2 eggs
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
1 ¾ teaspoons baking powder
½ cup milk

Putting together the cake

Step 1

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.

Step 2

In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.

Step 3

Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

Simple Icing

Ingredients

3 cups powdered sugar
1/3 cup butter, softened
1 1/2 teaspoons vanilla
1 to 2 tablespoons milk
(this will make 13x9 cake or a dbl-layer 8’ or 9’ cake)

Putting together the icing

Step 1

In medium bowl, mix powdered sugar and butter. You could use a spoon or fork, or if you want to be fancy use an electric mixer (on low speed).

Step 2

Stir in vanilla and 1 tablespoon of the milk.

Step 3

Gradually beat in just enough remaining milk to make frosting smooth and spreadable.

Other Toppings

Use fresh fruit with mint or chocolate or even s as a topping - depends on season and occasion
