Put the water, salt, yeast and flour in a salad bowl.
Mix for 2 minutes with a spatula.
Leave to rest overnight.
Cut the dough into 4 parts, fold each part twice on itself into 1/3 in the middle and the second third in the middle.
Leave to rest for 15 minutes.
Fold in the same way.
Let rest for 1 hour, preheat the oven 20 minutes before the end of the hour to 464°F with a glass of water in it.
Just before putting in the oven, shear the chopsticks and brush them with water.
Throw a glass of water into the oven. Bake for 16 minutes.
