As you wrap up the interview, you'll want to lead with a compliment then ask them what their next step is or what their next challenge is.
Ex: "You're really killing it in the online space right now, so tell me, whats next for you, whats your next challenge to take on?"
This gives you some great intel for later.

Later in the week or month you can contact them again about how you were thinking of them, had an idea, and wanted to know if they wanted to get on the phone.

After they receive the gift, and they thank you, they've opened up the lines of communication.
Now you ask them to hop on a call to dive into an idea you had for them.
Remember that even if you don't connect with this at this point in time, you have build a strong relationship that can be leveraged in the future.
