Preparation
Preheat oven to 350°F. Line a large baking sheet with a silicone baking mat or parchment paper.
In a large bowl, add applesauce and almond flour. Stir until almond flour is completely incorporated and evenly mixed in.
Using a 1 tablespoon cookie scoop, scoop cookie dough balls and place onto prepared cookie sheet, spacing cookies 2 inches apart.
Flatten each dough ball with the palm of your hand until it forms a thick round disk. Smooth the edges with your fingers as needed.
Bake cookies about 15-18 minutes or until edges turn a medium brown. Let cookies cool fully on cookie sheet before removing.
Notes
This is a very basic low sugar snack cookie. It has some sweetness, but not a lot. I used sweetened applesauce. You can use unsweetened, but the cookies will have almost no sweetness.
Variations:
add dried fruit or chocolate chips for more flavors and textures
stir in cinnamon or other fall spices into the dough
sprinkle the tops of the cookies with sugar or cinnamon sugar
