Chili Spiced Sweet Potato Tacos

Topped with creamy avocado lime sauce, these simple chili-spiced sweet potato tacos make a delicious vegetarian dinner.

Directions
Preheat oven to 400° F and line a large baking sheet with parchment paper.
Toss the sweet potatoes with olive oil, chili powder, salt and pepper, and spread onto the baking sheet. Roast for 20 minutes, or until golden brown.
Ingredients
1 medium sweet potato, cubed
Extra-virgin olive oil, for drizzling
1) Cotija Cheese is a crumbly mexican cheese, similar to feta in texture, color and flavor
Vegan option: Sub for yogurt. Blend until creamy: 1/2 cup raw, unsalted cashews (soaked for at least 1 hour) with 1/2 cup water. (also, omit cheese)
Gluten free option: Sub GF corn tortillas

Citrus Peanut Buddha Bowls

This fiber and protein dense meal will complete your day, making you feel full AND satisfy you taste buds without the guilt of post-meal bloat. Rice topped with garlic chicken, citrus sweet potatoes, spinach, onion, and avocado, drizzled with our favorite peanut butter citrus soy dressing.

DIRECTIONS
Preheat oven to 425°. On a large baking sheet, toss sweet potatoes and onion with 1 tablespoon of oil and season with salt and pepper. Bake until tender, 20 to 25 minutes.
Meanwhile, in a large skillet over medium- high heat, heat 1 tablespoon of oil. Season chicken with garlic powder, ginger, salt, and pepper. Cook until golden and no longer pink, 8 minutes per side. Let rest 10 minutes, then slice.

1 large sweet potato, peeled and cut into 1/2-inch cubes
1 large red onion, diced
1) for a gluten free option, sub liquid aminos... and for soy and gluten free, sub coconut aminos

The quality of your stock really dictate the quality of your risotto. If I have it I liked to used homemade shrimp stock, but a good quality store bought vegetable stock will work.

Preheat oven to 350F. Lightly grease a large 3 qt or 4 qt baking dish and set aside.Combine shredded cheeses in a large bowl and set aside.
Cook the pasta one minute shy of al dente according to the package instructions. Remove from heat, drain, and place in a large bowl.

Salmon Poke Bowls

One of our favorites! This poke bowl is easy, fast, and never fails to lighten up the mood at the dinner table. Homemade pickled cucumbers, ginger carrots, avocado, sesame seared salmon, and pickled ginger over sweet tangy sushi rice, drizzled with a sweet citrus ponzu.

For the Rice
Rinse the rice by placing it in a strainer and running cold water through until it comes out clear
Add all rice ingredients together in a pan (or instant pot and press “rice”)... Turn the heat to medium-high and cook until the water just reaches a simmer. Reduce heat to medium-low to maintain the simmer, and cook for 16-18 minutes or until all of the liquid is absorbed and the rice is tender.

Paleo Chicken Alfredo

Did you know you could make creamy Alfredo sauce with cashews, and pasta with a spaghetti squash... still don’t believe us? Try it out with this family favorite!

In a high-speed blender (I used a Vitamix), combine all ingredients. Blend until completely smooth. Sauce should be warm by the end of blending, if not, transfer it to a saucepan to heat before serving.

1) As weird as it may sound, soaked cashews can be used to make a great alternative to dairy creams, whether for a sauce, sour cream, cheese, it adds a nutty spin to a dairy alternative!
2) Nutritional yeast is a cheese alternative used in vegan, dairy free, and paleo cooking containing proteins and a wide array of vitamins, minerals, and antioxidants.
