Gochujang Beef Bowl

Ingredients

Gochujang Beef Components
225 g (1/2 lb) 90/10 ground beef
Sprinkle of kosher salt
50 g (~1/4 cup) gochujang paste
89 g (1/2 cup) frozen peas
Splash of water (as needed to adjust sauce consistency)
3 g (~1/2 tsp) sesame oil
Serving Components
Portion of steamed rice
Scallions, thinly sliced
Pickled ginger, thinly sliced

Instructions

Sear the beef: Add the ground beef to a pan over medium heat. Add a sprinkle of salt. Let it render out some fat and sear. Break it up with a wooden spoon or spatula as it starts to brown.
Sauce it up: When the beef is almost cooked through, add the gochujang and peas. Mix until well combined, and add a splash of water if the mixture is too tight. Mix or reduce until the sauce glazes the meat.
Turn off the heat and finish with a drizzle of sesame oil. Taste and adjust with salt if needed.
Serve: Add a portion of the beef mixture over a scoop of rice. Garnish with scallions & pickled ginger. Enjoy.
