Topics

We will let the conversation flow organically and make the most of the hour. Below are some questions and topics we can likely discuss.
Topic / Question
Context
Your family (influence and impact on you and on them)
The value of curation in scaling a business

What’s your internal rubric for licensing vs. incubating vs. joint venture—and what have you learned about protecting the DNA of the brand while scaling?
How you believe evergreen brands (institutions) are created.
are there any first principles or even very tactical decisions that you’ve found are essential from the beginning to do this?

Plus a few that instituations that have had a big influence on you.
What you’ve learned about inclusivity as a value prop for scaling a brand How have you operationalized the ability to serve such a diverse guest and still make everyone feel like it’s ‘their spot’? Is this part of the general hueristics of how you now think about builing every concept?
Speaking of hueristics → would love to know your decision matrix for decising when to move ahead with a project?

What are the non-negotiables before signing a deal?

How much do you pro-actively seek out new projects vs vetting the ones that come to you?

And how did you and Evan meet?
How did you get so focused on design?
And what’s your belief about why it is so vital?
How do you design a transportive experience?
an aside; do think this helps combat customer’s perception of a ceiling of the price of a dinner?
When does the process of menu design start after you’ve decided on a new concept?
And what are some non-negotiables in terms of margins and execution you think about here?
Systems for scaling?
And how do you balance system design vs enabling the agency and autonomy of your team?
How do you develop talent from within the org?
How do you think about the bench?
Are new projects ever decided specifically because of talent you have on the bench?
Anything the audience should know or hear from you before we go?

Remote Interview

Before you start, here are some tips for a seamless recording experience with Riverside:
Use a computer with a Chrome browser that’s
Check your internet stability. Ethernet cable connections are preferred over WiFi.
Use an external mic, if possible. Even the mic in your ear/headphones are better than nothing.
Use headphones/earphones to prevent echo and increase audio quality.
Close all other applications that don’t need to be open during the recording. This prevents CPU overload. Important: Please close all other programs that try to use your mic/camera.
Relax, have fun, be you. You’re awesome exactly the way you are, and you’re in this interview because we love the natural way you speak and operate

In Person Interview

Make sure to keep the microphone close; it’s an ‘eat the mic’ situation, if you’re too far away from the mic, the sound quality is impacted
Relax, have fun, be you. You’re awesome exactly the way you are, and you’re in this interview because we love the natural way you speak and operate
We typically need about 30min ahead of time to setup sound, lighting, and set prior to getting going
If we’re in your restaurant (which we love); we’ll try to be far enough away from the kitchen that the fridge compressors don’t add too much background noise, and in a perfect world, it’s great if you can turn them off for the hour, but we of course understand that can be a pain in the butt, so it’s absolutely not necessary if you can’t.
