when a reservation spans multiple days, all days are restored or removed.

Restoring means that room for that date become unavailable in the reservation form.

Erased data is gone forever, this is the back up table without further back up.

there is always version history in case you make a terrible mistake.

You can complicate this logic as much as you want, but it is wise not to give in....
