There are two upstairsy bits and a downstairsy bit (pit?), which probably would lend itself most naturally to the customer-facing area. There’s already a sink and counter built under the stairs where you could get water.
The raw concrete is fine, glass and high ceilings are great too. Unclear if there are any windows but maybe skylights?
