medium heat — the medium level of temperature of your cooker or oven
finely chopped — cut into small pieces
a pan — container made of metal to cook food in, usually on fire
a saucepan/pot — container used to cook, boil and stew food, usually using water
a pinch of smth — a very small amount of something (e.g. a pinch of salt, a pinch of pepper)
