PREHEAT OVEN to 350 F
Step 2
Take out
margarine or butter
for a few minutes before combining ingredients to warm up to room temperature. In a Large bowl Unwrap from parchment or foil and place shortening into bowl.

Cut
margarine or butter
into small pieces the size of sugar cubes
Step 4
Add
Golden or brown sugar
Mix thoroughly until the 2 ingredients are well creamed (by hand or with a mixer) This helps the brown sugar dissolve and be less granular

Add
Eggs
Vanilla extract
Quick cooking oatmeal
Mix thoroughly until creamy

Combine dry ingredients together before adding to the mixture in the bowl
Unbleached flour
Salt
Baking soda
Baking powder
Blend dry ingredients until well mixed - then add to the bowl and mix all ingredients together.

Chocolate chips
Batter will be thick and heavy. It may be easier to mix batter with your hands until it is well combined. If batter is too sticky, add a bit more flour (1- 2 Tablespoons at a time) until it makes firm ball shapes. To vary the basic recipe, you can add raisons or chopped nuts with or without the chocolate chips.

Using a spoon, drop the batter in balls onto the prepared (oiled/greased) approximately 2” apart to allow for spreading Baking trays
Step 9
Bake for 12 minutes at 350 F.
For softer cookies, remove when soft and light golden brown. They will get firmer when removed from the oven. Remove from tray when baked and still warm to cool. This prevents sticking to the pan. *Best served when warm while drinking cold milk.
