Top 2 ingredients most wasted in a kitchen
If you could ban one ingredient, tool, or phrase in the kitchen, what would it be
If we get to it:
A recipe or technique you borrowed from another chef that you still consistently use today in some form/fashion or exactly as is.
A dish that never made it on the menu because it was too hard to execute
The first thing to start to break down when you scale a restaurant concept quickly
A leadership lesson you learned by doing the opposite of a former manager
