Avoid a distracted audience with a regular drip of food and beverage.

Drinks

Coffee + tea + water: make this available all day!
Add in juices, energy drinks and soda: at snacks + lunch

Snacks

Offer an AM + PM snack: the healthier they are, the more awake your attendees will be.
Offer variety: don’t duplicate snacks between AM and PM, keep it interesting.
Tight budget? No problem: Do a Target or Costco run when you arrive: buy snacks/drinks that you continuously stock on a cart for people to grab from.

Lunch

Duration: if it’s an all-day session, provide 60 minutes for lunch, this offers a true mental break; 45 mins is typically the shortest lunch you should offer.
Consider workspace norms: talk to your point of contact, or the attendees themselves, as you decide on time of day and duration for lunch.
Dietary restrictions: use information from your dietary restrictions survey to plan food.
Arrange the caterer or local delivery: do this well in advance of your session.
Lunch setup and inclusions: Ensure you ask whether or not the vendor will set up the lunch and/or whether utensils/plates are provided to inform your supply list and your logistics.
Best lunch bets: box lunches are often affordable and allow for mobility in sitting outside or in one’s room if a mental break or working lunch is needed. This is great for a single-day event. For multi-day events, offer variety in your lunch offering, choosing a hot meal one day, a boxed lunch another.
